08-CrunchiesBlogShoot114Once you make homemade granola with berries you can never go back to store bought.  It is melt-in-your-mouth good! Ben has a soft spot for granola over yogurt so he was especially excited to see me experimenting in the kitchen with this recipe.  The added bonus was that the recipe was a hit with my kids too!  It’s is super simple and leaves the most delicious aroma throughout your house while it’s baking. Also, it looks pretty in a mason jar (and delicious it’s over ice cream).

Serves: Approx. 5 cups
Ingredients
  • 1 cup almonds
  • 3 cups old fashioned oats
  • ½ teaspoon sea salt
  • ⅓ cup light brown sugar
  • ⅓ cup honey
  • 3 tablespoons coconut oil
  • ½ teaspoon vanilla extract
  • ¼ cup dark chocolate chunks
  • ¾ cup Crunchies fruit (strawberries, blueberries, raspberries)
Instructions
  1. Preheat your oven to 350.
  2. In a blender, blend ½ cup of the almonds until finely chopped (not powdery though).
  3. Finely chop the remaining ½ cup of almonds with a knife.
  4. Combine the oats, salt, and brown sugar with the almonds in a bowl and stir to combine.
  5. Combine honey and coconut oil in a microwave safe bowl and heat in the microwave for 45 seconds. Stir to combine and then add the vanilla.
  6. Pour the honey mixture over the oats and toss until well coated.
  7. Spread the oats evenly on a parchment lined baking sheet. Bake the oats for 5 minutes, stir them and then bake them again for an additional 5 minutes.
  8. Remove the granola and parchment paper from the baking sheet and set aside to cool. Once completely cool you can break the granola into clusters.
  9. Add in your favorite Crunchies fruit and some dark chocolate chunks. Be sure to store in an airtight container.
  10. Tastes amazing over greek yogurt with drizzled agave. Also amazing in ice cream or with milk.

I’ve already made this recipe three times in the last month.  We love enjoying the granola and fruit over yogurt with agave drizzled over the top. It also tastes amazing like a bowl of cereal or mixed in with ice cream.
