Best Burger Recipe Ever with Secret Sauce


Seriously, this is the best burger recipe ever–it’s a Ben favorite.
I am kinda a stickler when it comes to homemade burgers. I can’t stand the dryness of pre-constructed or frozen patties, or when the patty turns into a giant dome that I can hardly bite into–and my burger muuust have cheese.  So last year I set about creating the perfect burger, and you know what? I don’t even make it on the grill.

Burger Ingredients:
2 lbs ground beef 85/15
sesame seed buns
1/2 cup of grated Monterrey jack cheese
1/4 cup BBQ sauce
season salt to taste
cracked black pepper
onion powder

We usually like to buy extra lean ground beef around these parts, but when it comes to a juicy burger, you’ve gotta make an exception.  The best burgers have more fat–naturally.

Combine the ground beef, grated cheese, bbq sauce, and seasonings.  Shape patties that are about 1 inch thick.  Then it is very important to  push a 1/2 inch indent into the center of the patty–this is what prevents the patty from becoming a dome.  These burgers stay extra moist because the bbq sauce and cheese are mixed in with the meat.

I cook the patties on this really cool skillet that has grill lines.  I wait for the skillet to get super hot and then I apply a very thin layer of butter to the grill lines.  Place the patties on indent side up as pictured.

Reduce heat to medium and allow this side of the patty to cook for about 4-6 minutes, but make sure it doesn’t burn. Then flip the burger over and cook until done.  I like my burger medium-well.  While the burger is cooking, I like to whip up some secret sauce–sort of my version of In & Out’s addicting sauce.

3/4 cup of mayo
1/4 cup ketchup
1/4 cup relish
2 tablespoons worcestershire
seasoned salt

Combine all ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.

I also butter and toast the buns on a skillet Pioneer Woman style.  Something about a sesame seed bun makes the burger seem more legit.

Now while the burger might not look like an award winner, it certainly tastes like it.

UPDATE: Many of you have had trouble with the burgers falling apart. For some reason, I have made these burgers many times and this has not yet happened to me.  But for those who are experiencing this, here are a few of my suggestions.  1. I don’t ever put this type of burger on the grill because it is too moist and will fall through the grates–which is why I use a grill pan.  2. I wait to flip the burger until one side is very thoroughly cooked, so that it holds together better before flipping.  3. If you are worried about them falling apart still, perhaps use less BBQ sauce than what I have listed in the recipe (try 2 tablespoons instead).  4. Some commenters have suggested adding some bread crumbs.  I hope these tips help.  These really do have a yummy flavor, sorry for those having trouble.

    Looks amazing! My husband and I love a good burger. We are always on the hunt at restaurants and making them different at home. Our favorite and easiest burger is a pound of burger and 1 packet of ranch seasoning. Once the burger is in a patty top it off with Tony Chachere’s Creole Seasoning. Seriously AMAZING!     I have never been to In & Out, but have heard it’s awesome! Although, being from the Chicago area, I love that you used Sweet Baby Ray’s…it’s the best! This looks delicious and easy, will have to try it when I get over having this nasty bout of strep throat!

    I tried this out last night and it was AMAZING! My hubby loved it too! And when I told him I made the sauce, he looked at me like “yea right and I’m King of the Ocean”. I told him how I did it and he was impressed. Thank you so much! So yummy. I did add chopped mushroom to my mix in the burgers though. Super good 🙂

    Try adding horseradish and hot sauce to the secret sauce…..I use this sauce/ tarter sauce for all fish entrees. My Mother used to fix this for us during The Lenten Season or anytime we had fish.

    Made this tonight and it was fabulous! I used turkey instead of ground beef. I would recommend some sort of binder like breadcrumbs or crushed Goldfish or crackers. This is def a keeper!

    Sad face, I followed the directions exactly and mine totally fell apart. Think I will add an egg next time to bind it. They were delicious hamburger chunks but not quite what i was going for.

      This also happened to me. I was going to make this recipe and my son who is 17 challenged me to a BBQ off. So I lost because mine fell apart, the dog got one too.. I was disapointed, we dont have a lot to spend on groceries so ….

    I was uhappy with this choice for our dinner tonight. I went to the store tonight to get the stuff to make this for my family and I wish I would have read the reviews first. The taste of the burgers was pretty amazing.. however they did fall completely apart. Can’t say I would make them again.

    I had the same problem as the last few posts….they just fell to pieces on the grill. They didn’t seem to be cooking, so I turned up the grill and they burned. The flavor was good, but there must be something I did wrong…maybe the suggestion of adding some breadcrumbs would work or cooking them on and indoor (George Foreman) type grill would be better. Anyone out there have the same problem and tried again and had any luck?

    We had the same problem as the other commenters. ALL of my burgers came apart. I even tried to refrigerate two before I cooked them to see if I could fix the problem. Super sad face! I think they would have been good, but I was too ticked off to even taste them at that point.

    I made these and wrote about them here. They were fan flippin tastic! I agree that they were the best burgers ever. We must have lucked out somehow as ours did not fall apart. Maybe people used a thinner type of bbq? Sweet Baby Ray’s is pretty thick. I’ll definitely make this again.

    I followed the recipe exactly and mine fell apart and were so burned/charred that it ruined the taste! 🙁 My husband said they burned bc of the sugar in the BBQ sauce. I’ll probably leave that out next time.

    i made these tonight and at first they were falling apart, however after a while i decided to try adding breadcrumbs & less cheese and it worked. Also as i was using a stove-top grill’ at first the burgers were coming out kinda burned and charred i decided to try lowering the heat(they were also not cooking thoroughly). It does take a little longer, but you don’t end up with a raw burger on the inside. Anyways after a couple of trials and errors they turned out amazing!!! Probably going to make MORE tomorrow with the leftover meat.:)

    I followed recipe exact, I have an infared really hot outdoor grill. These burgers would not firm up, fall apart mess, finally scraped up what I could to have basically, sloppy joes! Very good taste, I think a squirt of Sweet Baby Rays would be better, not 1/4 cup!!!

    I found your recipe on Pinterest and made these tonight! So so good. Mine didn’t fall apart at all, and I think it’s because I only used half the amount of sweet baby rays BBQ sauce it called for. They turned out much firmer this way, but still had a ton of flavor. This is the first time in a while my fiancé said a big “YUM!!” and went back for seconds (and almost a third!). Thanks so much!!

    I found the recipe on pinterest and made them tonight. My husband and I agreed they were the best burgers we’ve ever had. The BBQ saue was awesome, and they were melt in your mouth moist. Ours did not fall apart at all. We followed the recipe exactly. My husband wants to know when I can make them again! Thank you!!

    I made these last night and have a question….We put them on the grill and they fell apart everywhere. We couldn’t even flip them with out them breaking up. Ended up just throwig all the meat into a pile and ate them like sloppy joes. They were delicious for sure but wondering how I can keep them together? Any suggestions? Also, the sauce was AMAZING!

    Just wanted to point out that good burgers start with quality ground beef. The tube of LFTB from places like Walmart are not a good start for a burger.

    I loved the taste but also had the problem of them falling apart. The recipe doesn’t state the amount of ground beef to use. Definitely may because there was too much BBQ sauce and cheese to the meat. I am going to play with this. Maybe add and egg or some bread crumbs.

    I just made these and they are wonderful. I actually prepared the burgers last week, froze them uncooked, and thawed them today. I read the reviews and noted many people said theirs fell apart. When I made my mixture, I eyeballed the ingredients. I used Sweet Baby Rays, which someone noted is a thicker sauce. I probably didn’t put quite 1/4 cup – just enough to get the sauce incorporated for flavor but not soggy to the point they weren’t going to stick together without breadcrumbs (who wants a burger with breadcrumbs? Not me!). I also used a hamburger press maker to assemble them, not sure if that helped or not. Once on the grill today, I did not mess with them until after 5 minutes, when they were ready to flip. When they were done on the grill I brushed more sweet baby rays on both sides, and for added goodness, I shredded more cheese and let it melt on top of the sauce. I was worried the bbq sauce and the special sauce might clash, but they actually complemented each other very well. And the burgers stayed together! I’m really glad I have 8 more in the freezer to eat at a later date!!!

    I’ve been using this recipe for my burgers for ever! I’m glad someone else knows the secret ;). I won’t share the recipe with my family when they come over – haha!

    I love the flavor and so does my hubby. When I first started making them, they were a mess. However, we’ve learned less bbq makes all the difference. I don’t use near 1/4 cup (just a decent sized squirt) for a 1lb batch of meat, too much sauce will result in a crumbly mess and I refuse to add breadcrumbs to my burgers, so we just cut back on the sauce in the burger and add more to the top when they’re off the grill – delicious!

    I’ve made these twice and I love them. I’ve used leftover homemade bbq sauce and just used two tablespoons. The first time, they started to fall apart on the grill, so we put them in the broiler and they stayed together that way. I’m not sure I’d put them on the grill. And the secret sauce was a hit, too.     We made these for our Memorial Day cookout with a big backyard full of friends & family. They were great!!! I made the patties early in the day and left them in the fridge until we were ready to cook. I only used a couple of tablespoons of BBQ sauce in the patties and we brushed the rest on as the burgers cooked on the grill. We used a grill basket to make sure they didn’t fall apart. We also skipped the avocado and secret sauce because nobody wanted it. Everyone loved them and there are no leftovers for my lunch today 🙁 We’ll definitely be making these again.     I made these burgers for dinner tonight for my bf’s family; they were an absolute hit! I did everything down to toasting the buns, and in the end was told that they may be the best burgers they’ve ever had.     Am I the only one who doesn’t know how much ground beef to use for this recipe? I’m guessing 1 pound but I don’t see it anywhere…also wondering if that has something to do with some people’s burgers falling apart if they used too much beef?

    Holy cow these were delicious. I didn’t even get to make the sauce ’cause I have a limited college-student kitchen and I didn’t have relish and Worcestershire sauce. I added a slice of pepper jack cheese and this thing MELTS in your mouth. I’m giving myself a pat on the back and a huge I-owe-this-recipe for tonight’s dinner.

    Found this on pinterest. I made these burgers tonight for our July 4th cookout. They were fantastic! We grilled them outside and had no issues with them falling apart. I used a little over 2lbs of ground beef and eyeballed the rest of the ingredients.

    I’ve made these twice now (including last night), followed the recipe exactly, and they completely fell apart both times. Not a big deal to me since I choose to eat mine bunless, so it saves me the few seconds from cutting into it. I cooked them on my George Foreman, so it really doesn’t matter if you use that as opposed to a regular grill. That said, I will probably add an egg to the recipe next time to work as a binder. It needs *something* to hold it together. But the flavor is fantastic. I had not been able to make a good homemade burger until now. So pleased with the flavor. Also, I topped it with some chopped fresh basil and it was fantastic complement. The only reason why I am not giving this five stars is because of how easily they fell apart…and because there is no indication of how much meat to use (recipes are more helpful when we see more details instead of making us guess). So for those curious, I used a pound of ground beef, which gave me 4 burgers.

    We made these for dinner last night and they were delicious!! The sauce is amazing & I might have to make it every time we have burgers from now on 🙂 i added crumbled bacon to the hamburger mixture and a slice of American cheese on top when they were almost done, and we topped them with lettuce, red onion & grilled jalapenos. By the way, my husband (the grill-er in the family) had NO PROBLEMS with them falling apart! Thanks for the recipe!

    I made these the other night and like many others, mine fell apart. We were able to salvage them but it was disappointing. However, the flavor was really there 🙂 I may try them one more time and try using less Baby Ray’s like others have suggested and see how they turn out. Thanks for sharing!

    I made these tonight and they were really good. I added a 1/4 cup jog heavy cream to the meat to help hold together…. A little trick from the pioneer woman. Thanks for the recipe!

    Sweet Baby Ray Barbecue sauce is the best I ever found. you can put it on anything right out of bottle, sausage on a bun is awesome with it. Thanks for the burger idea.

    This makes an awesome burger………I don’t even LIKE burgers but, boy, I EAT THESE!!

    I have found that if you:
    A. patty the burgers earlier in the day and
    2. (lol) try to only flip once
    it helps immensely w/’fallapart’ issue!!

    Yummo! Having them AGAIN tonight!

    I started out making just a pound or two of these but there’s never enough!!! (Nice to keep in the freezer for last minute meals, again, IF there’s any left!)

    Just made these last night for my boyfriend and he couldn’t stop raving about how good they are! He said they really were some of the best burgers he’s ever had, and that’s saying something because he’s a VP of a meat distribution company so the man knows his meat! The best part is that not only are they delicious, they’re so simple, which is great for me because I’m still a rookie in the homemaking department. Thanks so much for the recipe, it’s definitely a keeper 🙂

    I have been addicted to recipes found on Pinterest… just tired of the same ol’ dishes I’ve made for years. When I saw these burgers and how easy they looked I had to try them. I whipped them up and my husband threw on the grill (we have a grill skillet like the one pictured). He had no trouble with them falling apart — I followed the recipe exactly. Both my husband and my daughter (17 yr old) loved the special sauce! I usually don’t eat the bun so I put the sauce on the meat and added jalapeños, tomato and lettuce. My family added cheese and lettuce.

    I made the burgers after reading the description on what to do so they don’t fall apart…I did it all and they fell apart on me…I was pretty discouraged until my boyfriend told me to just put the browned meat in taco shells…we loved it with everything we were going to put on the burger(avocado, sauce, lettuce, extra cheese, etc.). Just thought I’d share the suggestion in case yours falls apart too 🙂

    I have never in my life even tried to make burgers (im only 21 so it’s not so bad) and I have never commented on a food post before, but I made these today and they were phenomenal !! so easy and my boyfriend loved them too.     I made these last night, halving the ingredients except for the cheese. My husband said they were possibly the best burgers I’ve ever made! They were so juicy with great flavor. One patty was slightly bigger than the other (I made them approx. 1/3 lb each) and it was a little cracked at the top but didn’t fall apart. Maybe size can affect how well they hold together? Thanks for sharing.

    Making these right now..the sauce is like Thousand Island dressing. Delish! I’m using chow chow for the relish and using pepper jack for the Monterey Jack. cheese. I’m also using jalapenos ’cause I love spice. Thank you for the sauce recipe and the juicy burger recipe. Can’t wait to eat them.

    AMAZING! I made these tonight and can’t believe how delicious they were. I was nervous about them falling apart because of the comments. I did not touch them until they had cooked for 5 minutes on the first side flipped them and did not touch them until they were done. They stayed together fine. DELISH! Thanks for sharing 🙂

    I made these tonight and they were excellent! I only used one pound of hamburger since there are only three in my family; there were no leftovers. My teenager saw the sauce and said that he wasn’t interested, but once he saw me and his dad using it and slurping over it, he tried it and loved it, too! Thank you!     These are the best burgers I have ever tasted….and the sauce was to die for!
    I followed the instructions and the ingredients but I was worried about all the reviews about the burger falling apart.
    I used less bbq sauce and I formed the patties and refrigerated them for 1 hour.
    The result was amazing! I had no problem with the burgers falling part, I also used a skillet.
    I will use this recipe forever!!

    I have made these several times since finding the recipe and my family Loves them 🙂 I find if you make the burgers ahead of time and put in fridge for 2-4 hrs before cooking, you will have no problem with them falling apart on the stove or on outside grill. Have a plate in fridge right now for cookout later today ! love the sauce too. Thanks for the recipe 🙂

    Very tasty,put mine on the Forman grill for 10 minutes, and it was perfect. It fell apart a little while I was eating it, but had no problems on the grill. Husband liked it, he said the sauce was alright but no ininout so that was a bit of a failure.

    The “Secret Sauce” was dreadful. I followed the recipe exactly. But it may be my error. I added dill pickle relish because the recipe didn’t indicate which kind – sweet or dill (or did I miss that?).

    Hamburgers usually come with dill pickles, so I assumed the recipe called for dill pickle relish. Which is it? Because the dill pickle relish in the recipe is horrible.

    Anyone let me know. Thanks!

    If you would add 2T of flour the burgers are fluffy and not flat and norm. will not fall apart. Also try not to press your burgers. This makes them dry and less fluffy. You’ll have a better burger if you’ll follow these simple guidelines 😉 just a tip

    Hi, I am sorry but “the best burger ever” can’t start out with hamburger, it has to be a fresh ground blend of meats.. Just my thought. Look like great burgers though.

    If anyone has issues with the meat falling apart, you can also use a leaner hamburger. I have found that if I am using any kind of “liquid” in my hamburgers, like Worcestershire or barbeque or even steak sauce, I have to buy a leaner ground beef (90/10 or higher even), and my hamburgers don’t fall apart when I flip them over. Having the liquid and a fatty meat makes it too moist that the meat can’t stick together.

    I would like to make this special sauce but in Australia we dont have “Sweet Relish”. We have corn relish, gerkin relish, caramelised onion relish but no sweet relish. Can someone please tell me what a good substitute would be and still have the same tasting sauce.

    For those that are having problems with the burger breaking apart, grate the cheese fine, the cheese will seperate the meat if its too big and it will fall apart. I used one of those tiny graters and had no probs, also like she said cook the first side pretty good before flipping.

    LOVE this burger recipe…secret sauce and all. I enjoy this burger with iceberg lettuce, red onion, pickles and that delicious secret sauce. Regarding the falling apart, yes if you use too much barbecue sauce they do fall apart easily (although still delicious!). I also recommend using Sweet Baby Rays sauce. Tried others and Sweet Rays had the best results. Also, I agree with the earlier post about using a small grate of cheese.

    These burgers are awesome and this recipe has become one of our favorite, go to burger recipes. So simple and I always have the ingredients on hand! For those having trouble with them falling apart, try making them ahead of time and putting them in the fridge for a few hours (about 4-5 hours is best, or even overnight). This has happened dramatically when cooking them on the grill!

    I just made these, I wont say it was the best burger I have ever had, but it was darn close, it was kind of upsetting the 1st time I tasted the special sauce, pretty much was just like thousand Island. so I beefed it up with some Sweet baby Rays BBQ sauce and some Worcestershire sauce to give it a little kick. I wish a measurement was give for the seasoning salt. I went pretty liberal with it. i used 2 rounded tablespoons of BBQ sauce in the meat mix, I had 1 out of 7 that kind of fell apart because it stuck to the grill, yeah I done them on the grill.
    a few pointers for good burgers, when you are making the patty dont smash and squeeze for long the more you handle the meat the less it will bind together. I just grab a hand full squeeze 1 time to make it a ball, smash flat 1 time, put the dent in the top, done, never smash a burger on the grill, you are just pushing out the moisture. made sure and put the big dent it the top center so they cook flat and not ball shaped.

    I substituted ground turkey for the ground beef and they turned out to be the juiciest, best, hands-down turkey burgers I have ever eaten. My husband loves them too!

    This is the only burger recipe I use now! It’s that good. I don’t usually make the sauce to go with it though. I found it to be a little too runny. And I can use a good pre-made thousand island dressing if I want. I’ve also played around with different cheeses when I didn’t have Monterey Jack and it works out fine.

    Much like my own recipe, but for the Sweet Relish which I am now going to add ( I used Sweet Chilli in mine)
    I also add 3 x EGGS in mine (for same amount of meat and if the meat is too lean to my taste I add a bite of LARD to it.) to help the meat from falling apart, while still keeping the moist.
    I never thought of making a dent which is a great idea and will be done with mine.

    Hey Ashley! The second I saw the picture of the Sweet Baby Ray’s BBQ sauce, I thought you might be onto something with this burger recipe, but then I noticed the Monterrey jack cheese and realized, you really are onto something here. I’m going to give this recipe a whirl tomorrow.

    your burger sucks dick sticks to cast iron skillet and that all we cook on we don’t have fancy pan like you do they fell apar to they did not stick together and they burnt so I just the rest in the oven fuck it

    I make sliders out of this recipe. I use the square brownie pans. Butter and broil Hawaii rolls to use as buns. Never fall apart that way. Great recipe!!

    Captain Kutchie Pelaez is MORE than FAMOUS, He’s more than famous, he is INFAMOUS! And that’s pretty DAMN SMART if you ask me. HELL, that’s “INSMART”. Captain Kutchie Pelaez is more than FAMOUS, Captain Kutchie Pelaez is MORE THAN SMART!….Pardon all the dots, no they’re not some kind of secret code or anything that I know of.

    The One really Big Thing that none of these crazy posts ever comments about are The Million’s of Dollars that the Infamous Captain Kutchie Pelaez gives away to his lucky Prime Rib eaters every month. We usually only hear about his famous cheese burgers in paradise but the man’s Prime Ribs in Swamp Water are the best thing that I have ever put in my mouth! The finest Prime Ribs this side if Heaven, they will melt in your mouth. Our whole family goes over to Kutcharitaville at least twice a week for Captain Kutchie’s amazing Prime Ribs. Also we can enter the contest for the monthly million dollar give away every month. My cousin won a million dollars last year. His wife won a new Jaguar car
    two months later. I won a car before Christmas and you talk about nice. It was INNICE!…that means it was more than nice.
    Y’all keep eating at Captain Kutchie’s and keep you’re fingers crossed whenever you enjoy Kutchie’s World Famous Roast Prime Ribs of Beef and Key Lime Pie and just maybe, if you’re lucky you might win yourself a cool Million Dollars!
